Perlée began with a shared love of sparkling wine and a belief that Oregon could express it in a deeply personal way. For Tiffany and Grant Austin, what started as a dream of making wine gradually became something larger: a place shaped by the land, by generations of Oregon history, and by a desire to bring people together.
Perlée is the expression of that vision — where traditional-method sparkling wine, thoughtful hospitality, food, agriculture, and design come together in one place. The intention is simple: to create something enduring, deeply connected to Oregon, and worth sharing.
The Story
The Estate
Perlée sits on a property in the Dundee Hills that Tiffany and Grant Austin fell in love with and felt an enormous responsibility to steward. The vineyard is only part of it. Forest, gardens and wildlife surround the estate, and the goal from the beginning has been simple, to leave this land better than they found it.
At the table
Food is an essential part of how Perlée is experienced.
Led by Chef Brian Barker, the culinary program is shaped by the seasons, the estate and the extraordinary ingredients of the Pacific Northwest. Each menu is created in conversation with the wines, bringing another dimension to the Salon Experience while remaining distinctly rooted in Oregon.
For Brian, the kitchen is an extension of the landscape — thoughtful, precise and constantly evolving with what is growing around us.
