EXPERIENCES AT PERLÉE
At Perlée, the experience unfolds through wine. Each visit begins with a welcome pour and moves through cellar and library selections chosen for precision, texture and sense of place. A seasonal menu accompanies each glass, shaped by what is growing on the estate and designed to deepen the conversation between wine and food. Only a limited number of guests are welcomed each day, into a space built around atmosphere, restraint and quiet intention.
The salon

At the heart of Perlée is the Salon Experience, our most immersive expression of wine, food, place and hospitality. Each experience unfolds over six to eight seasonal courses, with Perlée sparkling wine woven throughout. Guests may also choose from additional wine experiences, including selections from exceptional Oregon producers and wines from beyond the region.
The Perlée Apéritif
For a different way to experience Perlée, the Perlée Apéritif offers a more relaxed introduction to the house, pairing Perlée sparkling wine with a thoughtful selection of small bites.

Collection
The Oregon Collection turns the focus toward the place we call home, offering an opportunity to discover wines from compelling Oregon producers alongside food created to complement the experience.
Chef Brian Barker
Chef Brian Barker leads the culinary program at Perlée. Formerly of Smyth in Chicago, awarded three Michelin stars and named number one on the North America's 50 Best Restaurants list, Barker brings the same precision to Perlée's table that the estate brings to its wine. His menus draw from the estate's own gardens and the surrounding forest, changing with what the land offers each day, built to move alongside every glass.
Perlée Atelier
Beyond these experiences, Perlée Atelier is our gathering place for discovery and connection. Its evolving calendar brings together chefs, winemakers, growers, artists and makers through classes, collaborative dinners, seasonal celebrations and shared tables.
